Ingredients

  • (OR) Bone-In Pork Chops
  • Boneless Pork Chops
  • Salt & Pepper
  • Garlic Powder
  • Smoked Paprika
  • Olive Oil
  • Butter
  • Dried Oregano
  • Dried Thyme
  • (8 Cups) Fresh Spinach Leaves
  • (1 teaspoon) Agave Syrup or Honey
  • 4 large russet potatoes
  • Italian Seasoning
  • Grated Parmesan Cheese
  • (2 cloves) Minced Garlic
  • (8 ounces) Sliced Mushrooms
  • (1 Cup) Bone Broth
  • (1/2 Cup) Heavy Whipping Cream
  • (2 Tablespoons) DIjon Mustard
  • Half a Lemon, juiced

Directions

  1. Season the Pork Chops:
    • Preheat your oven to 450°F.
    • Season the pork chops on both sides with salt, pepper, garlic powder, and smoked paprika.
  2. Sear the Pork Chops:
    • In an oven-safe skillet, heat olive oil over medium-high heat.
    • Sear the pork chops for 3-4 minutes on each side until golden brown.
    • Transfer the chops to the preheated oven for about 10-12 minutes or until they reach your desired level of doneness.
    • Remove the chops from the oven and set them aside. Sprinkle with oregano and thyme.
  3. Wilted Spinach:
    • Using the same skillet, add spinach and agave syrup (or honey).
    • Cook for 1-2 minutes, tossing gently until the spinach wilts.
  4. Smashed Potatoes:
    • While the pork is in the oven, cut the potatoes in half.
    • Toss them with olive oil, salt, pepper, Italian seasoning, and Parmesan cheese.
    • Bake in the oven at 450°F for 20-25 minutes until they're crispy and golden.
    • Once done, use a fork to gently smash each potato.
  5. Dijon Mushroom Sauce:
    • In a separate pan, heat olive oil and add minced garlic.
    • Add 8 ounces of sliced mushrooms and sauté until they release their moisture and turn golden brown.
    • Stir in 2 tablespoons of salted butter, 1 cup of bone broth,1/2 cup of heavy whipping cream, 2 tablespoons of Dijon mustard, 1 teaspoon of dried thyme, and half a lemon juiced.
    • Simmer the sauce for about 5 minutes until it thickens slightly.
  6. Plating:
    • Arrange a pork chop on each plate.
    • Spoon the Dijon mushroom sauce over the chops.
    • Serve with a side of wilted spinach and a generous helping of crispy smashed potatoes.
