Ingredients
- (OR) Bone-In Pork Chops
- Boneless Pork Chops
- Salt & Pepper
- Garlic Powder
- Smoked Paprika
- Olive Oil
- Butter
- Dried Oregano
- Dried Thyme
- (8 Cups) Fresh Spinach Leaves
- (1 teaspoon) Agave Syrup or Honey
- 4 large russet potatoes
- Italian Seasoning
- Grated Parmesan Cheese
- (2 cloves) Minced Garlic
- (8 ounces) Sliced Mushrooms
- (1 Cup) Bone Broth
- (1/2 Cup) Heavy Whipping Cream
- (2 Tablespoons) DIjon Mustard
- Half a Lemon, juiced
Directions
- Season the Pork Chops:
- Preheat your oven to 450°F.
- Season the pork chops on both sides with salt, pepper, garlic powder, and smoked paprika.
- Sear the Pork Chops:
- In an oven-safe skillet, heat olive oil over medium-high heat.
- Sear the pork chops for 3-4 minutes on each side until golden brown.
- Transfer the chops to the preheated oven for about 10-12 minutes or until they reach your desired level of doneness.
- Remove the chops from the oven and set them aside. Sprinkle with oregano and thyme.
- Wilted Spinach:
- Using the same skillet, add spinach and agave syrup (or honey).
- Cook for 1-2 minutes, tossing gently until the spinach wilts.
- Smashed Potatoes:
- While the pork is in the oven, cut the potatoes in half.
- Toss them with olive oil, salt, pepper, Italian seasoning, and Parmesan cheese.
- Bake in the oven at 450°F for 20-25 minutes until they're crispy and golden.
- Once done, use a fork to gently smash each potato.
- Dijon Mushroom Sauce:
- In a separate pan, heat olive oil and add minced garlic.
- Add 8 ounces of sliced mushrooms and sauté until they release their moisture and turn golden brown.
- Stir in 2 tablespoons of salted butter, 1 cup of bone broth,1/2 cup of heavy whipping cream, 2 tablespoons of Dijon mustard, 1 teaspoon of dried thyme, and half a lemon juiced.
- Simmer the sauce for about 5 minutes until it thickens slightly.
- Plating:
- Arrange a pork chop on each plate.
- Spoon the Dijon mushroom sauce over the chops.
- Serve with a side of wilted spinach and a generous helping of crispy smashed potatoes.
