Ingredients

  • (1 (1.5 lb. average)) Beef Skirt Steak
  • (2 tsp (for marinated steak)) Dried Thyme
  • (1 tsp (for marinated steak)) Ground Cumin
  • (1 tsp. (for marinated steak)) Chili Powder
  • (1 tsp. (for marinated steak)) Salt
  • (1/2 tsp (for marinated steak)) Black Pepper
  • (4 cloves (for marinated steak)) Garlic Minced
  • (2 Tbsp (for marinated steak)) Olive Oil
  • ((for marinated steak)) Additional spices optional such as paprika or smoked paprika
  • (2 Cups (for garlic butter broccoli)) Broccoli Florets
  • (2 Tbsp (for garlic butter broccoli)) Unsalted Butter
  • (2 Cloves (for garlic butter broccoli)) Minced Garlic
  • Salt and Pepper (to taste) (for garlic butter broccoli)
  • Fresh Thyme Sprigs (for garnish) (for garlic butter broccoli)
  • (1 Large Head (for Cauliflower Mac and Cheese)) Cauliflower Head, cut into florets
  • (1 Cup (for Cauliflower Mac and Cheese)) Grated Cheddar Cheese
  • (1/2 Cup (for Cauliflower Mac and Cheese)) Grated Parmesan Cheese
  • (1 Cup (for Cauliflower Mac and Cheese)) Milk (your choice)
  • (2 Tbsp (for Cauliflower Mac and Cheese)) Butter
  • (1 tsp (for Cauliflower Mac and Cheese)) Garlic Powder
  • Salt and Pepper to taste (for Cauliflower Mac and Cheese)

Directions

  • In a small bowl, combine thyme, cumin, chili powder, salt, black pepper, minced garlic, and olive oil to create the marinade.
  • Place the skirt steak in a resealable plastic bag or a shallow dish and pour the marinade over it. Massage the marinade into the steak, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate the steak overnight.
  • About 30 minutes before cooking, remove the marinated skirt steak from the refrigerator and let it come to room temperature.
  • In the meantime, prepare the sides:
    • For the Garlic Butter Broccoli:
    • Bring a pot of water to a boil. Add the broccoli florets and cook for 3-4 minutes until they are tender-crisp. Drain and set aside.
    • In a pan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
    • Add the cooked broccoli to the pan and sauté for an additional 2-3 minutes, tossing to coat in the garlic butter. Season with salt and black pepper to taste. Keep warm and garnish with fresh thyme sprigs before serving.
    • For the Cauliflower Mac and Cheese:
      • Steam or boil the cauliflower florets until they are tender. Drain well and set aside.
      • In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in the garlic powder, salt, and black pepper.
      • Add the almond milk and bring to a gentle simmer. Gradually whisk in the grated cheddar and Parmesan cheese until the sauce is smooth and creamy.
      • Add the cooked cauliflower florets to the sauce and stir to coat them evenly. Cook for an additional 2-3 minutes, or until heated through.
  • Heat a skillet or pan over high heat. Remove the skirt steak from the marinade and pat it dry with paper towels.
  • Add a little oil to the pan and sear the skirt steak for 2-3 minutes per side for medium-rare, or longer if desired. Let the steak rest for a few minutes before slicing it thinly against the grain.
  • Serve the sliced marinated skirt steak alongside the Garlic Butter Broccoli and Cauliflower Mac and Cheese. Garnish with fresh thyme sprigs for a delicious and healthy meal.
