Cooking Tip: Marinate in citrus, garlic, cumin, and olive oil for at least 1 hour. Cook over the highest heat possible — a screaming hot grill or cast iron — for just 2 to 3 minutes per side for medium rare. Do not overcook skirt steak or it will tighten up quickly. Rest for 3 minutes and slice thinly across the grain at a strong angle.
