Ingredients
- (1 large) Spaghetti Squash
- (3 Tbsp.) Olive or Avocado Oil
- Salt & Pepper, to taste.
- (1 pack) Ground Beef
- Small Onion, diced.
- (2 cloves) Minced Garlic
- (1 jar) Marinara Sauce
- (1 tsp.) Italian Seasoning
- (1 Cup, torn into pieces.) Fresh Mozzarella
- Fresh or Dried Parsley (for garnish - optional*)
Directions
- Roast the Spaghetti Squash: Preheat your oven to 400°F. Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil over each half and season with salt and pepper. Place cut-side down on a baking sheet and roast for 35-40 minutes until tender.
- Cook the Beef Marinara: Heat 1 tbsp olive oil in a large skillet over medium heat. Add ground beef and cook until browned (5-7 minutes). Drain excess grease if needed.
- Add diced onion and garlic to the skillet. Sauté for 3-5 minutes until onions are translucent.
- Stir in marinara sauce and Italian seasoning. Season with salt and pepper to taste. Simmer over low heat for 10-15 minutes, stirring occasionally.
- Assemble the Dish: Use a fork to shred the cooked spaghetti squash into strands. Divide among serving bowls.
- Top It Off: Spoon the beef marinara over the squash. Add torn mozzarella on top while the dish is still warm to let it melt slightly.
- Garnish & Enjoy! Sprinkle with fresh parsley and serve immediately.
