Ingredients

  • (1 pound) Ground Beef
  • (1/4 Cup) Almond Flour
  • (1/4 Cup) Grated Parmesan Cheese
  • (1/4 Cup) Chopped Fresh Parsley
  • (2 cloves) Minced Garlic
  • (1 tsp) Dried Oregano
  • (1/2 tsp) Salt
  • (1/4 tsp) Black Pepper
  • (1) Egg, beaten
  • (2 Tbsp) Olive Oil
  • (1 (cut into florets)) Medium Head Cauliflower
  • (2 Tbsp (for cauliflower mash)) Butter
  • (1/4 Cup (for mashed cauliflower)) Heavy Cream
  • Salt and pepper, to taste
  • (2 Tbsp (for the gravy)) Butter
  • (2 Tbsp (for gravy)) Almond Flour
  • (1 Cup (for the gravy)) Beef or Chicken Broth
  • (1/4 Cup (for the gravy)) Heavy Cream

Directions

1. Preheat the oven to 375°F (190°C).

2. In a mixing bowl, combine the ground beef, almond flour, Parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, black pepper, and beaten egg. Mix until well combined.

3. Shape the mixture into meatballs, about 1-2 inches in diameter.

4. In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.

5. Transfer the meatballs to a baking dish and bake in the preheated oven for 15-20 minutes or until cooked through.

6. Meanwhile, steam the cauliflower florets until tender. Drain well.

7. In a separate pot, melt the butter over low heat. Add the steamed cauliflower and mash until smooth.

8. Stir in the heavy cream and season with salt and pepper to taste. Keep warm.

9. In the same skillet used for the meatballs, melt the butter over medium heat. Whisk in the almond flour until well combined.

10. Gradually pour in the broth while whisking constantly to avoid lumps. Cook until the gravy thickens, about 5 minutes.

11. Stir in the heavy cream and season with salt and pepper to taste.

12. Serve the meatballs over the cauliflower mashed potatoes and drizzle with the keto-friendly gravy.
