Ingredients
- (8) Chicken Drumsticks
- (1 Cup) Olive Oil
- Juice of 1 Lemon
- (3 Cloves) Minced Garlic
- (1 Tbsp) Smoked Paprika
- (1 Tbsp) Oregano
- (1 Tbsp) Parsley
- (1 Tsp) Garlic Powder
- (1 Tsp) Onion Powder
- (to taste) Salt & Pepper
- (4) Sweet Potatoes
- (2 Tbsp) Olive Oil
- (1 Cup) Mayonnaise
- (3 Cloves) Minced Garlic
- (1 Tbsp) Lemon Juice
- (1 tsp) Dijon Mustard
Directions
Greek Chicken Drumsticks:
Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, oregano, parsley, garlic powder, onion powder, salt, and pepper until well combined.
Marinate the Drumsticks: Place the Ayers Valley Farm chicken drumsticks in a resealable plastic bag or shallow dish. Pour the marinade over the drumsticks, ensuring they are fully coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate.
Preheat the Oven: Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper or lightly grease it.
Bake the Drumsticks: Remove the drumsticks from the marinade, allowing any excess to drip off. Arrange them on the prepared baking tray. Bake for 35-40 minutes, turning halfway through, until golden brown and cooked through to an internal temperature of 165°F (74°C).
Sweet Potato Fries:
Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into evenly sized fries.
Season the Fries: In a large bowl, toss the sweet potato fries with olive oil and salt until well coated.
Bake the Fries: Spread the fries on a baking tray in a single layer, ensuring they are not overcrowded. Bake at 375°F (190°C) for 25-30 minutes, turning halfway, until crispy and golden brown.
Garlic Aioli:
Prepare the Ingredients: Mince the garlic cloves finely to ensure a smooth texture in the aioli.
Combine the Ingredients: In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper until smooth and well blended.
Taste and Adjust: Taste the aioli and adjust the seasoning if needed. If you prefer a thinner consistency, you can add a little more lemon juice.
Serving:
