Ingredients

  • Bone-In Pork Chops (Large)
  • (Bone-In or Boneless - Your Choice :)) Boneless Pork Chops
  • (4 cloves) Minced Garlic
  • (1 Tbsp.) Fresh Rosemary
  • (1 Tbsp.) Fresh Thyme
  • (to taste) Salt & Pepper
  • (1 bunch, trimmed) Asparagus
  • (1 bag (16 oz)) Frozen Cauliflower Florets
  • (3 Tbsp.) Olive Oil (or butter)
  • (1/4 Cup) Plain Greek Yogurt

Directions

Ingredients:

For the Garlic Herb Pork Chop:

  • 1 large pork chop from Ayers Valley Farm
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste

For the Asparagus:

  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Creamy Cauliflower Mash:

  • 1 bag (16 oz) frozen cauliflower florets
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 1/4 cup plain Greek yogurt
  • Salt and pepper, to taste

Instructions:

Garlic Herb Pork Chop:

  • Mix the minced garlic, chopped rosemary, chopped thyme, salt, and pepper in a small bowl.
  • Rub the garlic herb mixture onto both sides of the pork chop.
  • Heat a skillet over medium-high heat and add a drizzle of olive oil.
  • Cook the pork chop for about 4-5 minutes on each side until the internal temperature reaches 145°F (63°C).

Asparagus:

  • Preheat the oven to 400°F (200°C).
  • Place the trimmed asparagus on a baking sheet.
  • Drizzle with olive oil and season with salt and pepper.
  • Roast in the oven for 10-12 minutes until tender and slightly crispy.

Creamy Cauliflower Mash:

  • Cook the frozen cauliflower florets according to the microwave instructions on the package.
  • In a skillet, melt the butter (or heat olive oil) over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
