Cheesy Beef Stuffed Peppers

Ingredients
- (4, any color.) Large Bell Peppers
- (1 pound) Ground Beef
- (Small, diced.) Onion
- (2 Cloves) Minced Garlic
- (1 Cup) Cooked Rice
- (1 Cup) Shredded Cheddar Cheese
- (1 Can (14 oz), drained.) Diced Tomatoes
- (1 Teaspoon) Italian Seasoning
- (To taste.) Salt and Pepper
Directions
Preheat the oven to 375°F.
Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
In a skillet over medium heat, cook the ground beef until browned. Add the diced onion and minced garlic, and cook until the onion is softened.
Stir in the cooked rice, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
Remove the skillet from heat and stir in half of the shredded cheddar cheese until melted and combined.
Spoon the beef and rice mixture into each bell pepper until they are filled to the top, pressing down gently to pack the filling.
Cover the baking dish with foil, ensuring the peppers are snugly covered, and bake in the preheated oven for 25 minutes.
Remove the foil, sprinkle the remaining cheddar cheese on top of each pepper, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove the stuffed peppers from the oven and let them rest for a few minutes before serving.
Serve the cheesy stuffed peppers hot and enjoy the delicious flavors!
