Grass finishing on native pastures produces marbling that is richer in omega-3s and fat-soluble nutrients, with a depth of beef flavor that grain finished cattle simply cannot develop.
Cooking Tip: Bring to room temperature, pat dry, and season generously with salt and pepper. Sear in a cast iron skillet with butter, garlic, and fresh thyme over high heat — 4 minutes per side for medium rare — then baste continuously and let rest 5 to 7 minutes before slicing. For a thicker cut, finish in a 400 degree F oven after searing.
