Cooking Tip: Pat dry and season simply with coarse salt and black pepper — this cut does not need much. Sear in a hot cast iron skillet with butter, garlic, and fresh thyme for 2 to 3 minutes per side, basting constantly, then finish in a 400 degree F oven until the internal temperature reaches 130 degrees F for medium rare. Rest 5 minutes before serving.
