Teriyaki Chicken with Fried Rice

Ingredients
- (1 pound, cubed.) Boneless Skinless Chicken Breast
- (2 tbsp.) Olive Oil or Avocado Oil (for the chicken)
- (1/2 cup.) Soy Sauce or Soy Alternative (for the chicken)
- (1/4 cup.) Honey (for the chicken)
- (2 tbsp.) Brown Sugar (for the chicken)
- (2 cloves) Minced Garlic (for the chicken)
- (1 tsp.) Grated Ginger (for the chicken)
- (1 cup.) Jasmine Rice
- (2 cups. (for the rice)) Chicken Broth (for the rice)
- (2 tbsp.) Olive Oil or Avocado Oil (for the rice)
- (1 Large) Egg, beaten (for the rice)
- (1 cup.) Diced Carrots (for the rice)
- (2 Tbsp.) Soy Sauce or Soy Alternative (for the rice)
- (1 tbsp.) Sesame Oil (for the rice)
Directions
- Cook jasmine rice in chicken broth over medium heat until tender. Fluff with a fork and set aside.
2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the beaten eggs and scramble until just set. Remove from the skillet and set aside.
3.Add 1 tablespoon of olive oil to the skillet and cook the carrots and peas for 3 minutes until softened. Add the cooked rice, soy sauce, sesame oil, and scrambled eggs. Stir to combine and cook for another 3-5 minutes. Set the fried rice aside.
4.In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the cubed chicken and cook for 6-8 minutes until browned and fully cooked.
5.In a small bowl, whisk together soy sauce, honey, brown sugar, garlic, and ginger. Pour the sauce over the chicken and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
6.Serve the fried rice on plates or bowls, topped with teriyaki chicken. Enjoy
