Pork Sausage Street Tacos with Homemade Salsa Verde

Ingredients

  • (8) Small Corn Tortillas
  • (1 pack (or Plain Pork Sausage to be seasoned)) Pork Sausage (Chorizo, Sugar Free)
  • (1 cup, finely diced) White Onions
  • (1/4 cup, freshly chopped) Cilantro
  • (2, cut into wedges for garnish) Limes
  • Avocado Oil, Tallow or Lard - for frying
  • (1 pound (for salsa verde)) Tomatillos, husked and rinsed
  • (1-2 (for salsa verde)) Jalapeño Peppers, stemmed and seeded for less heat - spicier? Add more.
  • (1/2 cup, roughly chopped (for salsa verde)) White Onion
  • (2, minced) Garlic Cloves
  • (1/2 cup) Cilantro Leaves

Directions

Make the Salsa Verde:

  •  Place tomatillos and jalapeños in a saucepan, cover with water, and bring to a boil. Simmer for about 10 minutes until tomatillos have changed color and are cooked through.
  • Using a slotted spoon, transfer the tomatillos and jalapeños to a blender. Add chopped onion, garlic, and cilantro. Blend until smooth. Season with salt to taste. Set aside to cool. 

    Prepare the Pork Sausage:

    • In a skillet over medium heat, crumble the pork sausage. Cook until browned and fully cooked through, about 10 minutes. If the sausage isn't already seasoned like chorizo, add chili powder, paprika, cumin, and a bit of vinegar while cooking to mimic the flavor. 
    • Remove from heat and keep warm.

    Fry the Tortillas:

    •  In a small skillet, heat a thin layer of oil over medium-high heat. Lightly fry each tortilla until just beginning to crisp but still pliable, about 30 seconds per side. Drain on paper towels. 

    Assemble the Tacos:

    •  On each fried tortilla, place a generous amount of the cooked pork sausage. Top with diced onions and chopped cilantro.
    • Spoon over some of the homemade salsa verde. 
    • Serve the tacos with lime wedges on the side for squeezing over the top.
