Ingredients
- (1 lb) Ayers Valley Farm Mild Italian Pork Sausage
- (1 tbsp) Olive Oil or Butter
- (1) Yellow Onion (Minced)
- (2) Garlic Cloves (Minced)
- (4-5) Medium Potatoes (Diced)
- (4 cups) Chicken Broth (homemade if possible)
- (1 cup) Heavy Cream or Coconut Milk
- (2 cups) Chopped Kale or Spinach
- (1 tsp) Italian Seasoning
- Salt and Pepper (to taste)
Directions
- Heat oil in a large pot and brown sausage, breaking it apart as it cooks.
- Add onions & garlic and sauté 2–3 minutes.
- Stir in potatoes, broth, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are tender.
- Stir in cream and greens.
- Cook 3–5 more minutes, season to taste, and serve warm.
