Matzo Ball Chicken Soup

A nourishing, traditional soup using homemade chicken broth from your pasture-raised chicken carcass and tender matzo balls- the ultimate cozy meal.

Ingredients
- Ayers Valley Farm Whole Chicken Carcass + Picked Meat
- (8 cups) Water (for broth)
- (2) Carrots (sliced)
- (2) Celery Stalks (sliced)
- (1) Onion (diced)
- Salt & Pepper (to taste)
- (1 cup) Matzo Meal
- (4) Eggs
- (4 tbsp) Butter or Schmaltz (chicken fat)
- (1 tsp) Salt
- (1 tsp) Baking Powder
- (4 tbsp) Broth
Directions
- Make broth: Add carcass + 8 cups water to a pot, simmer 2–3 hours, then strain.
- Return broth to pot and add carrots, celery, onion. Simmer 15 minutes.
- Make matzo balls: Mix matzo meal, eggs, butter, salt, baking powder, and broth. Chill 20 minutes.
- Scoop into balls and simmer separately in salted water 20 minutes.
- Add chicken meat to soup, season to taste.
- Serve hot with matzo balls in each bowl.
