These are dry scallops, meaning they have not been treated with water-retaining phosphates that dilute flavor and prevent a proper sear. Cooking Tip: The key to a perfect sear is dryness and high heat. Pat scallops completely dry with paper towels and season with salt right before cooking. Sear in a screaming hot cast iron skillet with butter or a high smoke-point oil — do not touch them for 90 seconds to 2 minutes until a deep golden crust forms, then flip for just 60 seconds more. They should still be slightly translucent in the center. Perfect for classic pan-seared scallops with a lemon caper butter sauce, scallops over creamy risotto or polenta, scallop ceviche, baked with a parmesan herb crust, or as a stunning surf and turf alongside grass fed beef.
