Cooking Tip: Roast bones at 400 degrees F for 30 to 40 minutes until deeply browned before simmering — this step dramatically improves the flavor and color of the finished broth. Cover with cold water, add a splash of apple cider vinegar, aromatics, and vegetables, and simmer low and slow for 12 to 24 hours. Strain, cool, and skim the fat. The finished broth should gel completely when refrigerated — that gelatin is the goal.
