Our cattle are 100% grass fed and finished on chemical free native pastures with no antibiotics, no added hormones, and no vaccines. Active, pastured cattle develop lean, flavorful muscle that makes working cuts like flank absolutely shine with the right preparation.

Cooking Tip: Marinate for 2 to 4 hours in olive oil, garlic, citrus juice, and herbs for maximum tenderness and flavor. Grill or sear over very high heat — 3 to 4 minutes per side for medium rare — then rest for 5 minutes and slice very thinly against the grain at a 45 degree angle. This is critical for tenderness.
