Our Pork Spare Ribs are a classic, meaty rack cut from the belly side of the hog with more meat and fat than baby backs, making them ideal for low and slow cooking that produces fall-off-the-bone results. They have a rich, deeply satisfying pork flavor that rewards patience, and when the pork comes from a pasture raised hog raised the right way, spare ribs become one of the most memorable meals you can cook.

Our hogs are raised on chemical free pastures and woods where they root, roam, and forage freely. They are fed a corn, soy, and flax free non-GMO diet and raised with no antibiotics, no added hormones, and no vaccines. The fat quality in a pasture raised spare rib is exceptional — it renders down beautifully during a long cook and delivers flavor that clean raising alone can produce.

Cooking Tip: Remove the membrane from the back of the rack, apply a generous dry rub of salt, pepper, garlic, smoked paprika, and brown sugar, then smoke or roast at 225 to 250 degrees F for 4 to 5 hours using the 3-2-1 method — 3 hours unwrapped, 2 hours wrapped in foil with a splash of apple cider, and 1 hour unwrapped with sauce. Pull them when the meat has pulled back from the bone and a toothpick slides through without resistance. Perfect for BBQ rib plates, game day spreads, family cookouts, or any time you want to cook something truly impressive.
