Our Beef Tongue is a tender, richly flavored cut from 100% grass fed and finished cattle that has been prized in traditional cooking cultures from Mexico to Eastern Europe to Asia for centuries. Despite its unconventional reputation, beef tongue is one of the most tender and delicious cuts on the animal — the muscle barely does any quick movement, which means it stays incredibly soft after a long simmer, with a mild, clean beef flavor that takes seasoning beautifully.

Our cattle are 100% grass fed and finished on chemical free native pastures with no antibiotics, no added hormones, and no vaccines. Tongue from clean, grass finished cattle has a pure, mild flavor and a tenderness that reflects the quality of the whole animal it came from.

Cooking Tip: Place the tongue in a large pot with cold water, onion, garlic, bay leaves, peppercorns, and salt. Bring to a boil then simmer low for 2.5 to 3 hours until a skewer slides through with no resistance. While still warm, peel the outer skin — it comes off easily when hot. Slice thin or dice and use immediately or refrigerate for later. Perfect for lengua tacos with salsa verde and diced onion and cilantro, sliced thin on a charcuterie board, pan seared in butter after boiling for a crispy edge, or in a classic Mexican caldo.
