
Rotisserie Style Chicken is SO easy to make at home using your crockpot. I like to make this on days when I know we will be busy, but I still want to fuel our bodies with premium protein. Read below to get meal ideas for leftover chicken!
Ingredients:

1 Whole AVF Chicken (any size will do), buy here.

1 large Onion

1 tbsp. Olive Oil

1.5 tsp. Salt

1 tsp. Black Pepper

3 tsp. Italian Seasoning

1.5 tsp. Garlic Powder

1.5 tsp. Paprika
Directions:

Combine all seasoning listed above in a small bowl.

Peel and cut onion into large chunks, I quarter it, then spread it in the bottom of your crockpot crock (if you don't have an onion, you can also use aluminum foil or a wire rack to hold your chicken off the bottom of the crockpot.)

Remove your whole chicken from packaging, pat dry with a paper towel (there is no need to rinse the raw chicken - rinsing chicken can spread bacteria around your kitchen so it is best to remove packaging and place it directly into the crockpot, breast side up.)

Rub olive oil over the entire whole chicken, then sprinkle seasonings on top and rub them onto the skin and inside the cavity.

Cook on LOW for 6-8 hours or HIGH for 4-5 hours, cook time depends on the size of the chicken but the internal temperature of the breast should be 165 degrees F.

For the extra crispy skin, carefully remove the whole chicken from your crockpot and place it in an oven safe baking dish, drizzle a little bit more olive oil on the breasts and place it in the oven on the BROIL setting for 3-4 minutes, or until the skin gets a nice golden brown color.
