Homemade Chicken Nuggets are easily one of my favorite, quick lunch time meals. Sometimes it's hard to satisfy a chicken nugget craving, but this recipe hits the spot with guilt free flavor.
Ingredients:

2 chicken breasts OR 1 lb. ground chicken, purchase here.

3/4 C. Rendered Lard (or favorite cooking oil for frying)

1/2 C. all purpose flour

1 Tbsp. Garlic Powder

1/2 Tbsp. Paprika

1/2 Tbsp. Salt

1/4 tsp. Black Pepper

1/4 tsp. Onion Powder
Directions:

Combine all seasonings and flour listed above in a medium bowl, whisk together with a fork.

Add cooking oil to a medium to large skillet and heat on medium to high heat (I prefer to use cast iron!)

Remove your chicken from packaging, pat dry with a paper towel if using chicken breast (there is no need to rinse the raw chicken - rinsing chicken can spread bacteria around your kitchen so it is best to remove packaging and place it directly onto a cutting board.)

Cut chicken breast into bite size pieces, or if using ground chicken roll 1 inch balls then smash flat with hands.

Place the chicken into the flour and seasoning mixture, gently covering all sides of the chicken.

Place the chicken in the hot skillet making sure not to crowd any pieces. Brown all sides until the internal temperature reaches 165 degrees Fahrenheit.

Place the chicken on a plate with a paper towel the chicken to absorb any leftover oil that may come off the chicken nuggets. Optional: add a little salt when they're done cooking, then enjoy!
If you have leftovers, reheat in the oven or an air fryer for a nice crispy chicken nugget! Meal idea: serve with homemade french fries and/or a side salad!
