
These are Josh’s favorite cookies, even though he hates bananas. It makes no sense!
They’re super easy to make, helps get rid of those bananas that have been sitting on the counter a few too many days & they are delicious to eat warm or cold!
Prep Time: 10 minutes
Cook Time: 13 minutes
Ingredients:
1 large egg
2 medium ripe bananas
1/2 C. light brown sugar
1/4 C. sugar
1/4 C. unsalted butter, softened
1 1/2 C. old fashion oats
1 1/4 C. all purpose flour
1 1/4 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 1/4 C. chocolate chips
Directions:
Mix the egg, bananas, brown sugar, sugar and softened butter together on high for 4 minutes in a large mixing bowl with a hand mixer or in a stand mixer.
Add the oats, flour, cinnamon, baking soda & salt and beat on low until combined.
Add in chocolate chips 1/2 cup at a time and mix on low until combined.
Let the mix chill in the fridge for a minimum of 2 hours or overnight if you forget, like me.. then bake at 350 degrees for 13 minutes, it makes a super soft, yummy treat for the whole family to enjoy!
